1. Preheat oven to 350F. Spray a 9x13 inch glass baking dish with no-stick baking spray; set aside. Peal, core and dice your apple(s).
2. In a large bowl, combine butter, flour, and brown sugar. Mix until the mixture resembles wet sand and no large butter pieces remain. Mix in pecans.
3. Press about 2 cups of the crumb mixture into the bottom of the baking dish; set aside. Reserve remaining crumbs for the next step.
4. Using a rubber spatula, add cinnamon, baking soda, and salt to the crumb mixture and mix until combined. Next add sour cream, egg, and vanilla to the crumb mixture. Mix all together until fully combined. Lastly, add and stir in the diced apple.
5. Pour the mixture evenly over the crumb base and spread out with a rubber spatula. Bake for 30-40 minutes or until a toothpick in the center comes out clean. Cool for 10 minutes. If serving immediately, dust top with powdered sugar.
