Grease a small sheet pan.
preheat oven to 350 degF
Cream sugar, extracts and butter until well mixed.
Sift the flour and salt together and then combine with the sugar mixture until just comes together.
Fold in half the pecans.
Press the dough into the greased sheet pan with your fingers.
The dough should be around 1/4 inch thick.
Top with the remaining pecans and use a rolling pin to press the pecans into the top of the dough.
At this point you can refrigerate for 30 minutes or overnight. Or you can just bake it now.
The case for refrigeration is that is gives the dough a chance to fully absorb the flavors of all the ingredients. Also, refrigeration will allow the dough to absorb all the butter and develop the gluten so that cookies are chewy and soft.
Bake at 350 degF for 20 to 25 minutes.
Remove and cut the warm dough into squares with a pizza cutter.
