Very quick and easy
Preheat the oven to 200C. Place the pine nuts on a baking tray and bake for 3-4 minutes or until light golden. Set aside. Cook the pasta in a large saucepan of salted boiling water until al dente. Drain and keep warm. Heat the oil in a frying pan over low heat. Add the garlic and leek and cook for 5 minutes or until soft. Add the stock and cream and simmer for 2 minutes. add the broccoli and cook for 5 minutes or until slightly thickened. Toss the sauce with the pasta, salt and pepper and sprinkle with the pine nuts.
