This is no ordinary meatloaf. Add the southern flavor of pepper jelly and things get, shall we say, extraordinary. The carrots and onions and delicious glaze make it an extra special 'from the garden' treat.
1. Preheat oven to 350 degrees.
2. Together in a large bowl, thoroughly combine beef, eggs, thyme, onion, olive oil, carrots, garlic, salt, black pepper, 3 tablespoons pepper jelly and bread crumbs.
3. Spray inside of a 9 x 5" loaf pan or oven dish with cooking spray or coat with additional olive oil.
4. Add beef mixture to the dish. Create a little "moat" between edge of beef mound and dish edge to keep glaze from running over side of dish.
5. Bake loaf in oven for 25 minutes at 350.
6. While this is baking, make glaze: stir together remaining 1 tablespoon pepper jelly, 1/3 cup organic ketchup, and 1/2 tsp cumin.
7. At the 25 minute mark, take loaf dish out and spread glaze over beef mound.
8. Return to oven and bake for another 35 minutes.
9. Then switch oven to broil and give it a nice 10-15 minute browning on top (watch carefully to prevent blackening).
10. Serve to rapturous applause.
