Put potatoes in pot of water with 2 bay leaves and garlic cloves and large pinch of salt. Boil, then reduce to a simmer and cook until tender. Drain . Toss with 2 T olive oil, then transfer to a baking sheet and smash. Drizzle with more olive oil, season with salt and pepper. Broil, turning, until crisp and golden - 15-20 minutes.
The flatter you smash them the crispier they'll get.
