This is a vegan, whole food banana bread.
1. Preheat Oven to 350
2. Lightly Grease a Standard Loaf Pan
3. In a large bowl, mash the bananas.
4. Add Applesauce, Aquafaba, Honey, Sugar and Whisk Until Foamy
5. Mix together Flour, Baking Powder, Baking Soda, Salt, Cinnamon, Nutmeg, Coriander Seed in a medium bowl.
6. Add the dry ingredients to the wet and hand mix with a rubber spatula until combined, do not over mix.
7. Dump the mix into the pan.
8. Sprinkle a little coconut sugar on top of the raw loaf.
9. Bake at 350 for approx. 45 minutes.
10. Remove from oven and let sit for 10 minutes.
11. Transfer loaf to cooling rack for cooling.
Don't over mix!! You can sub any sort of fake (or real) eggs for the aquafaba, but i think the aquafaba is the best.
