Quick, easy and delicious....what more can you ask for?
Place boneless skinless chicken breasts in a gallon size Ziploc freezer bag with pesto. Make sure chicken is coated on all sides. Place in refrigerator overnight. Lightly coat a 9"X9" pyrex dish with olive oil, layer chicken in the bottom of the dish, top with mozzarella cheese add a layer of tomatoes on top. Bake at 400 degrees for about 40 minutes. Serve with a side salad and a piece of crusty garlic bread.
If you do not want to make this dish the following day the pesto coated chicken may be kept in the freezer until you are ready to use; defrost and follow above directions.
I use 1 chicken breast per person....I add an extra 1 or 2 so I can have leftovers to make a chicken spaghetti----Cut up the leftover chicken and combine with the leftover tomatoe sauce in the dish. Put in a large skillet. To the chicken, add, about 1/2 cup pesto, a jar of your favorite spaghetti sauce (we like chunky style with lots of veggies), 1 lb. cooked pasta, 1 tsp. Italian seasoning. My son likes when I add a bag of frozen broccoli, cauliflower and carrots. You can add whatever you have on hand.
