Easy and quick to prepare Italian-style pesto pasta
Cook and drain pasta according to the instructions on the package.
In the meantime, heat up olive oil in a pan and add tomatoes. Fry unti they start releasing the juice. Then add spinach and cook togetheruntil spinach is ready. Add cooked pasta and pesto and mix together. Keep stirring for a few minutes until everything is hot. Add fresh mozzarella at the top.
Optionally:
Add minced garlic with the spinach (1 or 2 cloves).
Add mozzarella to the pan with the pasta and pesto to melt it.
