Suggest a better description1. For the vinaigrette, sweat ginger, garlic, cinnamon, and star anise in oil in a nonstick skillet over a medium-low heat until softened, 2-3 minutes. Transfer mixture to a glass measuring cup and whisk in lime juice and fish sauce.
2. For the salad, soak vermicelli according to package directions. Rinse vermicelli with cold water and drain thoroughly.
3. Toss vermicelli with chicken, carrots, mint, scallions, jalapeño, and vinaigrette. Garnish salad with peanuts.
