preheat oven to 325.
combine the first 5 ingredients in a food processor. process for 10 seconds until combined.
Scatter the cubed ghee around the bowl and then pulse 4 to 5 times, until a ball of dough forms and the ghee is in pie-size pieces.
gather the dough into a tight ball and roll it out to a circle 1/4 inch thick between two sheets of parchment paper.
Press the dough into the bottom and up the sides of a 9-inch pie plate. fold the edges under and crimp or flute the dough with fingers.
cut a circular piece of parchment paper to fit the bottom of the crust and fill with pie weights or dried beans.
bake for 10 minutes, then remove the weights and bake 5 more minutes. cool on a wire rack.
make ahead tip: prepare and bake the crust 2 days before. cover and store in the fridge until ready to bake.
