Sweet pie crust for 9" plate.

Mix dry ingredients. Cube butter and add to dry ingredients. Mix until crumbly with pea sized pieces of butter.
Mix water and vodka. Combine all ingredients with minimal mixing. Dough should stick when pressed. Add more ice water as needed.
Flattened dough and layer twice. Shape into discs - 1 per 4 servings. Place in fridge for 2-24 hours. Let sit for 10 mins before use.
*Optional Step*
If baking the shell, roll out pie crust and place in pie plate. Cut, fold, and crimp edge to preferred style. Place in freezer for at least an hour.
Set oven to 425 degrees. Add pastry weights separated by parchment paper. Place in oven for 20 mins. Remove from oven and take out pastry weights.
In a separate bowl, mix egg with approximately 2 teaspoons of water. Brush egg wash on the pie crust. Dock (pierce) the bottom with a fork.
Add pie tent. Cook for another 10 minutes. Reduce heat to 350 for another 20 minutes. Varies heavily depending on oven and pie plate. Remove when golden brown.
Lentil sized pieces of butter for a more uniform pie crust - good for lattices. Pea sized for flaky - which needs some layering.
You can substitute half the butter for bacon fat.
