Place the peeled, quartered potatoes in a saucepan of cold salted water. Bring to a boil and cook until tender. Meanwhile, brown onions and garlic on medium-low for 10 minutes. Drain and mash the potatoes. Add garlic and onion, cream cheese, salt and pepper. Set aside to cool. If desired, shape into 1 tablespoon mounds.
Dough-
Combine flour and salt in a bowl. Make a well and add egg, sour cream, and water. combine with a spoon. Place on a well-floured plate and kneed 50 turns (if necessary, with a scraper) until smooth. Cover with a towel or inverted bowl and let rest for at least 15 minutes.
Divide the dough into three. Keeping extra dough covered, roll out each section 1/8-inch-thick and add flour as needed. Cut 3-inch circles and save left-over dough. Fill each circle with about a tablespoon of potato mixture, fold them into a half-circle, and squeeze the edges tightly. Set them aside on a towel dusted with flour. Place pierogis in boiling water, stirring to keep them separate, and cook for about 4 minutes or until they come up to the surface, then another 45 seconds to a minute. Remove with a slotted spoon and place on an oiled baking tray. Serve.
To freeze - after cooking, place in single layer on cookie sheet and freeze. Place in plastic sealable freezer bags.
My Babci used to fry these up in bacon grease the next day with breakfast.
