In a skillet, cook sausage, drain, and set aside to cool.
In a large mixing bowl, combine the prepared pimiento cheese, shredded cheddar, baking mix, salt, and milk. Add the sausage, mixing with your hands, until well combined.
Roll meatballs by the tablespoon, placing them 1 inch apart on a greased baking sheet.
Bake for 15 to 20 minutes.
Cook’s Note: Use a toothpick to check the doneness around the 15-minute mark. Once the toothpick comes out clean, the sausage balls are ready to serve!
