With knife, remove skin and excess fat from ham, leaving on a thin fat covering. Place ham on rack in large open roasting pan. Bake in 325F oven 3-3.5 hours til meat thermometer reaches 140F (about 15-18 minutes per pound). If ham browns too fast, cover with a tent of foil. About 40 minutes before ham is done, prepare glaze. In small bowl, mix pineapple, brown sugar, maple syrup, ginger and dry mustard. Remove ham from oven. Evenly spoon pineapple mixture on ham. Bake 30 minutes longer. Serves 25
