Heat grill. Slice pineapple into 8 rings. Season beef with 1/2 tsp salt. Coat pineapple and bell pepper pieces with cooking spray, season with 1/4 tsp salt. In a saucepan, whisk together pineapple juice, 1/4 cup water, brown sugar, oil, ginger, cornstarch, red pepper, remaining salt and pepper. BRING to a boil, simmer 1 min. Add fillets and pineapple slices to grill, then grill until desired doneness. Let beef and pineapple rest 5 min. Grill peppers 5 min. flip over then grill an additional 3 min.
