stir in sugar, boil for 5 mins
soak gelatine in cold water and dissolve in the boiling water
remove pineapple mixture from heat and stir in gelatine
sprinkle jelly powder into pineapple mixture, stir until dissolved
pour into greased glass dish (270 ml x 180 ml) - refigerate until set
cut into squares and roll in coconut
keep refigereated and keep between greaseproof paper in airtight container
