Like Charlotte's - very good on fish tacos, cream cheese, anything!
Makes about five 1-1/2 cup jars.
Create a simple syrup in large pot by whisking sugar, apple cider & lemon juice. Turn up heat & boil for 2 minutes. Turn off heat & let sit while prepping remaining ingredients.
Simply put, puree everything in Ninja & add to pot.
Bring to boil, boil for about 10 minutes.
All totaled, the 2 cans of peaches & 2 cans of mangoes equals about 32 oz pureed (with impeller in bowl)
Peppers equal about 52 oz (w/impeller)
Crushed pineapple with its juice plus the apple cider equals 28 oz pureed.
Made about 7.5 cups of salsa.
Recipe makes about 4 pint jars (2 cups each) of salsa.
To can, immerse in lightly boiling water bath for 15 minutes.
