Transfer half the vegetable mixture to a second baking sheet, roast 10 min. In a bowl, combine ketchup, honey, and chili powder, set aside. *Heat remaining oil in a skillet. Season pork, cook until browned. Nestle pork among vegetables. Spoon half the ketchup mixture over pork, roast until done 18 min. Transfer pork to a cutting board, spoon remaining ketchup mixture over top. Let rest 5 min. before slicing. Toss vegetables with lime juice and cilantro. SERVE with pork
