Goes anywhere regular onions go, and makes everything taste like a special effort was made with very little work.
Place onions in jar. In a 2 quart sauce pan bring vinegar, chiles, and sugar to boil on medium heat. Pour mixture over onions. Chill in ice water bath. Serve cold.
There are many variations possible for this recipe. Add 1 cup of lime juice and subtract 1/2 cup vinegar, add 2 tsp. Kosher Salt, add 2 tsp. Oregano, or sub. Splenda for Sugar.
