This is a smokey pinto bean soup, with a little spice to it! Great served with corn bread!
Dice onions.
Place ham hocks in a full pot of water with pinto beans, onion, salt and pepper.
Cook for 4+ hours, remove the hocks, debone, discard fat and skin, shred meat, and place shredded meat back into the pot.
Dice peppers, add to pot, add noodles to pot.
Optionally brown 1 lb of ground beef, and add to pot as well.
Cook for another 15-30 minutes or until peppers and noodles are tender.
Check that soup is salted appropriately, and serve hot with cornbread.
Don't rush this, take your time, it only gets better the longer you cook it!
