- Soften the yeast in 2 TBLS water 1/2 tsp for normal rise time, 1/4 tsp for 24 hr or longer rise
- Place flour and salt in mixer or bowl, stir
- Add water and dissolved yeast
- If using a stand mixer, mix it slowly for 2 minutes, a little faster for 3 minutes, and slow again for 2 more minutes
- Cover dough and let rise for 1 1/2 hour to 2 hours for normal rise, punch down and use or put in bowl bowl and cover in fridge for storage. Let dough come to room temp for about 2 hours before using
- Punch it down and push out the air bubbles. Form the dough into a large ball, then cut into 3 275 grams pieces
