Spread the cauliflower rice on parchment paper on a baking sheet and bake at 425 for 30 minutes until golden brown. Remove from oven and cool. Using a kitchen towel or paper towel, remove excess water from the rice.
In a large bowl, combine cauliflower, eggs, parmesan cheese, and 1/4 tsp salt. Stir well to mix. Place the mixture on the parchment paper and press to make the crust. In a separate bowl, combine chicken, olives, italian seasoning, and pepper.
Arrange chicken and olives on top of the crust. Top with cheese and bake for 25 minutes until golden brown.
To make tzatziki sauce, combine cucumbers, yogurt, garlic, and 1/4 tsp salt. Cut pizza and garnish with sauce.
Makes 4 servings.
