Base: Process base ingredients in food process for 30 seconds, until ingredients are mixed well and consistency of inside of a sausage (cane done by hand, but it's exhausting). Transfer mixture to large bowl and add filler ingredients for either American style of Mexican stye brats, stirring to combine. Place bowl in refrigerator for 15 minutes.
When filling mixture has chilled, fill shallow bowl with warm water. Working on at a time, dip a spring roll wrapper in water to soften it, and then lay it flat on a clean work surface. Place 1/3 cup of filling in the center of the wrap in the shape of a hot dog and then fold up the wrap and bring in the sides. Chill the rolled brats for another 10-15 minutes.
To cook on stovetop, place brats in a skillet on medium high heat and cook for 5-7 minutes, rotating every 12 minutes. To cook on grill, rotate every 1-2 minutes until the wrapper starts to bubble.
