Suggest a better description1. Preheat oven to 275 degrees and oil in Dutch oven. Generously salt roast on both sides.
2. Cut onions in half, from root to tip. Cut off ends and peel. Brown on both sides. Remove to plate.
3. Scrub carrots and cut into 2 inch slices and brown and remove.
4. Add more oil and and brown meat on both sides and remove.
5. Deglaze with stock and add meat.
6. Top with carrots and onions. Place sprigs of rosemary and thyme in stock.
7. Cover and bake for 3 - 3 1/2 hours.
