Preheat oven to 375F
Line baking tray with parchment
Boil the potatoes and carrots in salted water until tender--5 minutes. Drain well and tip into bowl.
Add the chutney, thyme, mustard, cheese and season to taste. Cool.
Roll out pastry to thickness of toonie and cut into 8 x 13cm squares.
Divide the filling between the squares placing in the centre. Brush edges with beaten egg.
Bring together the 4 corners of each square in the middle, then press all the seams together like a square envelope.
Brush with more egg.
Place on baking tray and bake for 30 minutes until golden.
