Hearty potato chowder with many optional variations.
In a large stock pan melt butter sweat onions. Add rest of ingredients except cheese. Let simmer about 70 minutes. While stiring slowly add in cheese ( so it doesn't clump and ball). While cooking stir regularly so the milk doesn't stick and burn.
You can also add cubed ham, broken cooked bacon, cubed cubed chicken or turkey. Tabasco if you like some spice.
