Suggest a better descriptionPeel Potatoes and cut into cubes. Dice up onion. Cut up bacon and cook. Remove bacon and Drain grease. add 3 tablespoons butter. Add onions and garlic and cook til onions are translucent. Add 2 tablespoons of butter. Add seasonings and Add flour and stir immediately. Add 3 cups chicken stock and stir mixture. Add 2 cups milk and 1 cup heavy whipping cream. Add potatoes and bring to a boil and cook til tinder. About 20 mins.
Shred cheeses.
Turn down to low.
Mash potatoes but leave some chunks. Add more chicken stock if needed and add bacon and cheese.
Optional
Add shredded cheese, bacon and sour cream on top.
