Peel and dice potatoes, cover potatoes and onion with water or chicken broth just to cover. Boil till done but not mushy, add cream cheese. Remove from heat and stir till cheese melts. Add remaining ingredients and reheat.
Serve with shredded Cheddar Cheese and bacon bits.
