1.Preheat the oven to 425.
2.Heat up the olive oil or bacon grease over medium heat
3.Add garlic and onion and saute until fragrant - about 5 minutes
4.Add potato wedges and cook for another 15 minutes, stirring twice to coat all the potatoes in the bacon grease.
5.Top with bratwurst and place in the oven to bake about 35-45 minutes.
6.Flip the brats about halfway through cooking time, but don't stir the potatoes
