A twist on mashed potatoes
Heat the oil in nonstick pan. Cook onions until they turn golden, about 5 minutes. Stir in the vinegar and continue to cook until the onions are soft and sweet. Keep pan covered between stirrings.
Meanwhile, bring the milk and water to a simmer in a saucepan. Add potatoes and cook until soft. Using slotted spoon, removed potatoes and put in mixing bowl. Mash, adding cooking liquid until desired consistency is achieved. Stir in the sauteed onions, salt and pepper. Adjust salt and pepper to taste.
