Easy Lasagna Roll-ups Total Prep & Cook time: 45 min to 1 hr
Preheat oven to 375 degrees. Cook lasagna noodles in boiling salted water until almost tender about 10 minutes. Meanwhile, in a medium bowl combine ricotta, Parmesan, eggs and salt. Set aside. In a large skillet crumble beef brown over medium heat. Drain off fat, set aside. Drain lasagna noodles, rinse. Lay out noodles on a flat surface. Spread evenly with ricotta mixture: Sprinkle with reserved ground beef. Carefully roll up from the short side. Place seam side down in an 11 X 7 X 2 Inch baking pan. Pour spaghetti sauce evently over the rolls. Cover w/ mozzarella. Bake uncovered until hot and cheese melts. about 20 minutes.
