A tasty, healthy and easy to make recipe that can be eaten as is or in tostadas or tacos.
• Heat oil in a dutch oven over medium heat. Salt and pepper the breasts, then add them to the pan and let cook for 4 minutes or until browned on one side. Turn chicken over and brown the other side for 4 minutes. Remove to clean plate.
• Add the onion to the same pan and sauté for 8 minutes or until softened and lightly golden. Add the cumin and stir to combine, and then add beer and let cook for 4 more minutes.
• Add the Morelos sauce, chick peas, corn and chicken to the pot. Cover and simmer over low heat for an hour or until chicken easily shreds with a fork. Season to taste.
• Serve over quinoa, brown rice or bulgur and top with a dollop of yogurt and a couple of avocado slices. Provecho!
