Succulent slow smoked lamb
1. Trim excess fat from lamb (keep some fat)
2. Rub in oil
3. Combine rub ingredients and rub over lamb
4. Place in smoked or oven directly on rack, cook for 2 hours at 95c
5. Cover with foil and continue cooking at 105c until lamb reaches internal temp of 95c (approx 5hrs)
Serve with virtually anything, I like to serve in pita bread with Greek salad and Browns Tzaziki
