Preheat oven to 350 F. Grease two 5x9 inch loaf pans. Combine oil, sugars, pumpkin, and vanilla in mixing bowl. Beat well. Add sifted dry ingredients. Mix just until all dry ingredients are moistened. Pour batter into pans and bake 1 hour. Slice loaves into 12 slices each. Each slice is .75-inch thick.
Makes 2 loaves. Serves 24 (1 slice per serving)
