Our family pumpkin cookie recipe. Soft and spongy, winner of pumpkin bakeoff at least once... Never met anyone who didn't love them. Glaze with brown sugar icing or cream cheese frosting.
Cream shortening or butter, sugar and pumpkin. Add egg and mix well. Stir in sifted dry ingredients. Drop from spoon onto greased cookie sheet and bake at 375degrees for 10-12 minutes.
