Preheat the oven to 350°F. Line an 8" x 8" or 9" x 9" pan with parchment paper.
In a small bowl, soak the dates in hot water for 5 minutes.
Meanwhile, in another small bowl, combine the ground flaxseed meal and warm water. Set aside for 5 minutes. (It should be gooey and have an “egg-like” consistency.)
In a medium bowl, combine the oats, oat flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
Drain the soaked dates. Place in a blender with the almond butter, vanilla extract, pumpkin puree, non-dairy milk, and soaked flax “eggs.” Puree until smooth.
Pour the pureed mixture in the center of the dry ingredients and stir until smooth.
Fold in the cranberries.
Pour the batter into the lined pan.
Sprinkle with additional cranberries, cacao nibs, or chocolate chips, if desired.
Bake until a knife inserted comes out clean, about 40-50 minutes.
Let cool for at least 10 minutes and then slice.

Gluten-Free
Oat flour is naturally gluten-free, but it can be processed in facilities near wheat. If gluten is a concern for you, be sure to get “certified gluten-free” oat flour.
DIY Oat Flour
To make your own oat flour, place ½ cup rolled oats in a food processor. Pulse the oats until they are ground into a powder-like consistency.
Nut-Free and Low-Fat
Substitute 1/4 cup unsweetened applesauce for the almond butter. Also, add 5 minutes to the baking time.
Frozen Cranberries
If you can’t find fresh cranberries, you can substitute with frozen cranberries, which are available year-round. Thaw before using.
