For cupcakes:
Beat eggs in a large bowl, add all other ingredients (stopping at salt) and mix well. Pour into two lined cupcake pans and bake at 350 for 35 minutes.
For frosting:
Melt 4 T of butter in a small saucepan over medium heat until butter starts to brown. Remove from heat. Mix cream cheese and the melted and unmelted butter together, add powdered sugar and mix with a hand mixer on mediumn speed. add the powdered sugar gradually until desired consistency. Add the cinnamon oil. Frost the completely cooled cupcakes.
