Light and fluffy version of pumpkin cheesecake. With layers of graham crackers, no bake pumpkin mousse, topped off with whipped cream.
Equipment
9x13 baking dish, electric mixer, mixing bowls.
1. In a large mixing bowl, beat together the room temperature softened cream cheese, brown sugar or swerve, granulated sugars or swerve on medium speed until well combined and smooth.
2. Add pumpkin purée and spices until well mixed.
3. Stir in 1/2 of whipped cream or cool whip. until mixed together we’ll set aside.
4. Line the bottom of baking dish with Graham Crackers, break some in 1/2 or smaller pieces to cover the entire bottom base of pan. (Usually about 9 crackers per layer.)
5. Spoon 1/3 of pumpkin filling over crackers and gently smooth it out into an even layer, covering crackers completely. ( the pumpkin layer is much easier to spread when you dollop spoonfuls of the filling all over, (RATHER THAN DUMP IT IN A PILE IN THE MIDDLE.)
6. Repeat layering process 2 more times.
7. Evenly spread out remaining whipped cream or cool whip on top.
8. Cover pan tightly with plastic or tin foil and refrigerate for AT LEAST 4 hours or overnight before cutting and serving.
Fridge time is important to deepen flavors and soften crackers.
Use Honey graham or cinnamon graham cracker. About 27 crackers are needed., which is 1 whole boxe.
Use 1quart of heavy whipping cream or 16 oz or 2 8oz containers of cool whip.
Use full fat cream cheese.
Pumpkin pie spice : if wanted use 1-3 tablespoons pumpkin pie spice , rather than individual spices called for in recipe. There is a range individual spices are stronger. If using pumpkin pie spice , start with 1 Tablespoon and mix and taste, then add if needed up to 3 Tablespoons per your preference.
