Suggest a better descriptionIn a small pot, add cold water and sprinkle gelatin over the top. Let soften for a few minutes. Place on stove and stir over low heat until liquified. Remove and let cool.
In a stainless bowl whisk egg yolks and 1/2 cup of sugar. Add pumpkin, ginger, cinnamon, nutmeg, salt, and milk. Beat to blend. Put bowl over a simmering pot of water and whisk until the mixture thickens and becomes custard like (approximately 5 minutes.)
Pour and scrape gelatin into the pumpkin mixture and mix. Transfer to a large mixing bowl and let cool for ten to fifteen minutes.
Beat egg whites until they hold soft peaks. Slowly add sugar and beat until whites are firm. Fold into cooled pumpkin mixture. Beat heavy cream until stiff. Fold in as well. Chill until set, at least two hours, or up to a day.
