Moist pumpkin nut bread from the kitchen of Sandra Richards.
1. Preheat oven to 350 degrees F.
2. Combine pumpkin, sugar, milk, eggs and butter in large mixing bowl. Set aside.
3. In a medium size mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg.
4. Add dry ingredients to pumpkin mixture and mix until well blended.
5. Finely chop walnuts. Stir into mixture (can also add white chocolate chips and/or raisins)
6. Grease and flour pan.
7. Spread batter evenly in one loaf pan or 3 demi loaf pans.
8. Bake at 350 degrees F for 45-55 minutes.
9. Cool for 10 minutes before removing from pan.
Test doneness with toothpick. When removed, toothpick should not be gooey.
