Set oven to 350 degrees
Spray muffin tins
Mix dry ingredients (first 5) together. In a separate bowl, combine eggs and sugar; beat until fully incorporated. Add maple syrup, apple sauce, pumpkin, and melted coconut oil. Mix thoroughly. Add dry ingredients to wet. Spoon into muffin tins; filling only 2/3.
In a separate bowl, mix softened butter/coconut oil, sugar, and nuts. Spoon a little on top of each muffin.
Bake for 20 minutes or until tester comes out clean with an internal temperature of 160. Muffins will be very moist. As long as you have achieved 160 degrees, they are fine.
