This lovely soup beautifully combines the autumnal flavors of pumpkin, sage and apple.

1. In a large pot, melt the butter over moderate heat. Add the onion, carrot, celery, and apple and cook slowly, stirring occasionally, until the onion is translucent, about 10 minutes.
2. Stir in the pumpkin puree, wine, sage, and bay leaf. Add the water, broth, salt, and pepper and bring to a simmer. Reduce the heat and simmer, partially covered, for 30 minutes. Add the ham and simmer, until the vegetables are tender, Remove the bay leaf.
3. Wine Recommendation: Let a cool sauvignon blanc or Fum? Blanc from California bring its own combination of fruit and herbal flavors into play with the apple and sage of the soup.
Very tasty. The intense sage flavor is just right but made the soup slightly "bitter". I added a tablespoon of brown sugar to offset the sage a little and increased the wine from 1/3 to 1/2 cup to increase the fruitiness flavor. I also added a little liquid smoke (1-2 teas) to enhance the sage's smokiness. My next batch will have the entire Granny Smith apple instead of the half. The apple flavor went well with the pumpkin and sage. Also, the ham was a bit much; I will decrease it to a pound (from 1 1/2 pounds) on the next batch. Well worth making this soup as it is good!!
