Suggest a better descriptionAdd seasoning package, oil and water to small bowl and mix well. Set Aside
Trim chicken breast and cut into 1" to 1 1/4" wide strips.
Add chicken and seasoning mixture to plastic bag and massage to fully coat chicken.
Marinate for 1-4 hours
Grill chicken on charcoal or gas grill. Let set for at least 10 minutes after removing from heat.
Add 2 oz. of chicken along with 1/8 of the sliced onion, avocado and olives to 1/2 of tortilla. Top with shredded cheese and fold in half. Repeat with a second tortilla.
Heat skillet over medium/low heat and spray with cooking spray.
Place 1 or 2 folded quesadillas in the pan and spray the top side with cooking spray.
Cook on one side for 1-3 minutes or until golden brown then flip and cook on the other side until golden brown and cheese is melted.
Remove from pan and allow to cool slightly. Cut each quesadilla into four pieces.
Repeat the process with the remaining tortillas.
Serve with sour cream and salsa if desired.
