This is a bit decadent but with a side salad it makes a nice dinner (and who doesn't love bacon?). This recipe is from The Gourmet Toaster Oven Cookbook by Lynn Alley.
1. Preheat toaster oven or oven to 400ºF.
2. Roll out the pie crust to fit and 8 1/2 inch quiche dish. Prick the bottom to prevent it from bubbling up as it bakes.
3. Prebake the crust for 15 minutes until lightly golden. Remove from oven and reduce temperature to 350ºF.
4. Whisk together eggs, sour cream, salt and nutmeg until frothy.
5. Sprinkle bacon and cheese over the bottom on the pie crust. Pour egg mixture over the top.
6. Bake 30-35 minutes. Allow to cool 10 minutes to set and serve.
