A lot of no-knead bread recipes take up to 18 hours to properly rise, then another two after you turn the dough out on a board or bread tin. So I worked on a variation of the no-knead bread recipes that are floating out there and came up with my quick version.
1. Mix the yeast and water together in a large bowl. Let stand for 5 minutes.
2. In another bowl, combine all the dry ingredients and mix together with a whisk to ensure even distribution.
3. Add a little bit of the flour mixture to the water at a time, thoroughly mixing it with a spatula before adding more. If the dough looks dry or isn't sticky to the touch, add tablespoon of water, mix, check and add more if needed. You want the dough to be completely incorporated and sticky to the touch.
4. Cover the bowl with plastic wrap and set it someplace warm for 2-3 hours while the dough rises.
5. When risen, you can turn it out on to a greased and dusted cookie sheet or loaf pan. If you placed it on a cookie sheet, with a dough blade, lift one edge up and fold it over itself. Repeat this step for each edge until you get a nice round ball of dough. Spray the dough with olive oil or non-stick spray, and cover with plastic wrap. Let it rise for 30 minutes to an hour.
6. Make sure you have your oven rack in the middle of the oven and then preheat your oven to 475°F/245°C.
7. Place the cookie sheet or bread loaf tin into the oven and bake for 30-45 minutes, until golden brown and delicious.
8. When done, place the loaf onto a wire rack for cooling.
If you want, you can use a sharp knife to cut scores into the top of the loaf, so you can control how it splits when it bakes.
