Preheat oven to 350 degrees. Line a 9x11" baking pan with parchment.
In a large mixing bowl whisk together the flours and starches, quinoa flakes, through brown sugar.
Add in the melted coconut oil and incorporate. Mix eggs, maple syrup and vanilla together then add to the batter , mix until you get a smooth but sticky batter.
If the dough I'd dry, add almond milk, a Tablespoon at a time.
Stir in the chocolate chips. Spread the dough into the prepared pan and , using greased hands, smooth out the batter. Bake until the dough is golden an set,about 22 to 30 mins. The top should appear golden-brown around the edges and the center should be firm to a light touch.
Cool on a wire rack.
