Suggest a better descriptionBrown sausage on Medium heat until cooked
Remove sausage with a slotted spoon and reserve fat for cooking the vegetables
Add vegetables to pot and cook until tender about 8 mins
Add beans to pot along with oregano, thyme, and bay leaves
Add 14 cups of water to the pot and bring to a boil
Once booing turn down the heat to medium and let simmer with the lid off for one hour
Once beans are soft take out 4 cups of beans (drained) and mash with a potato masher
Return mashed beans to the pot and add creole seasoning and pepper to taste
Continue simmering until thickened to your liking about 1 hour
