Sift dry ingredients, in separate small bowl combine oil, sugar, buttermilk & eggs. In third bowl mix coloring, vanilla, water and vinegar. Add oil mixture to dry ingredients, stir until combined. Add coloring mixture and stir until combined.
Cupcakes...bake ~20 mins on 350
Dairy Free Vanilla
*Omit water, cocoa & color
*replace buttermilk w/almond milk
*increase vanilla to 2 1/2 tsp
