Red potatoes kissed by butter and married to blue cheese.
Fill a large soup pot with cold water, pinch of salt and cubed potatoes. Bring to boil and cook for 25 minutes or until they are fork tender. Drain the water and add the butter, milk, blue cheese and salt and pepper. Mash potatoes using a potatoe masher, and let the heat from the potatoes melt the butter and cheese into the mixture. Serve immediately.
Do not peel the potatoes, leave the skin on for texture and color. Don't make the potatoes too creamy by using a food processor or blender, mash by hand.
