Bring water to boil, add beans, reduce heat to simmer, cover and cook (skim) for 1 to 1-1/2 hours. Beans should be cooked through and creamy. Mash along with liquid in pot with potato masher until creamy.
Heat oil in medium saucepan. Saute onions with salt and pepper until soft and golden. Add beans and continue cooking until liquid evaporates and beans form a mass that pulls away from sides and bottom of pan (about 10 minutes).
